Under the High Chair is a wonderful food blog by Canadian chef, Aimée Wimbush-Bourque, that I've been reading lately.  Her post on yogurt sheet cake with berries makes me want to make it right this second!  She heads up another blog called Simple Bites, which is a part of Simple Living Media, which is "dedicated to inspiring people to live simply."

Last night, we had some friends over for Scrabble night and appetizers.  After we boiled the corn and sliced it off the cob, we set up a corn bar and served corn cups with different toppings: butter, lemon juice, shredded Monterey jack cheese, mayonnaise, salt, pepper, crushed red pepper.  I think everyone enjoyed their flavorful butter-slathered corn!

Other things to put atop your corn:

Old Bay seasoning

Smoked paprika


Parmesan cheese

Pressed garlic or garlic salt

Lime juice

Don't buy hot fudge sauce when you can easily make it in 99 seconds!  It's actually a recipe for ganache, so there are a host of other scrumptious uses for it!  Check out the recipe on Babble's food blog, The Family Kitchen.

ice cream sandwiches a la lazy baker

Cowboy cookies + Ciao Bella gelato = beautiful ice cream sandwiches

It is definitely ice cream sandwich weather in these parts!  These were ice cream sandwiches we put together with ingredients we already had at home.  The cowboy cookies provided an interesting texture and a nice, firm base for the gelato.  The sandwich on the left has Ciao Bella’s Key Lime Graham Cracker gelato and the other has their Malted Milk Ball gelato.  Both taste amazing and are a must-try!  Btw, I originally bought my Lazy Baker mixes for an amazing price at!

Cowboy Cookies (using Lazy Baker Chocolate Chip Cookie mix)

2 sticks of softened butter (1 cup)

1 large egg

2 teaspoons of vanilla

½ teaspoon of salt

¾ cup of oats

¾ cup of coconut

¾ cup of corn flakes

1 cup of chocolate chips (milk chocolate, semi-sweet or white chocolate)

Preheat oven to 350 degrees.  In a large mixing bowl, beat 2 sticks of softened butter until light and fluffy.  Add the egg and vanilla and continue beating.  Begin mixing as your gradually start to add the brown sugar, salt and lazybaker cookie mix.  Continue mixing until ingredients are thoroughly combined.  Add oats, coconut, corn flakes, chocolate chips and mix.  Roll dough into small balls or scoop out dough using a scooper (we have a great one from Sur La Table) and place on an ungreased cookie sheet 2 inches apart.  Bake for 10-12 minutes or until edges are golden brown.
